Apple Cranberry Crumble with Spiced Pecan Topping

Ingredients

3 cups apples, peeled, cored and diced
¼ cup dried cranberries
1 spiced orange tea bag
¼ cup brown sugar
1 Tbsp chopped crystallized ginger
½ Tbsp all-purpose flour
½ tsp cinnamon

Spiced Pecan Topping
1 Tbsp rolled oats
1 Tbsp all-purpose flour
2 Tbsp brown sugar
Pinch sea salt
½ tsp allspice
½ cup finely-ground pecans

Instructions
  1. Preheat oven to 350F. Lightly coat 6 4-ounce ceramic ramekins with canola oil spray.
  2. Soak dried cranberries in hot water with spiced orange tea bag for 10 to 15 minutes. Remove tea bag and discard water.
  3. In a large bowl, combine apples, cranberries, brown sugar, ginger, flour and cinnamon. Evenly divide the apple mixture into ramekins. Bake for 20 minutes.
  4. In a small bowl, mix together all ingredients for the Spice Pecan Topping. Top each ramekin with 2 tablespoons of topping and place in oven for an additional 20 minutes, or until topping is crisp and brown. Serve warm.
