Ingredients
1/2 cup chia seeds
2.5 cups light coconut milk
1/2 Tbsp maple syrup
2.5 oz strawberry preserves
2.5 oz granola
Instructions
- Combine chia seeds, coconut milk, and maple syrup in a bowl and refrigerate overnight.
- Split the soaked chia seeds between 5 cups. Garnish each cup with 1/2 oz of preserves and 1/2 oz of granola.
Notes: Chia seeds are rich in satisfying fiber and provide some protein and healthful fats too. Make this parfait a balanced breakfast or snack with the addition of a serving of protein-rich food like Greek yogurt, cottage cheese, eggs, or a tofu scramble.
