Southwest Turkey Breakfast Stack
4 2-oz turkey breast medallions
1 tsp Blackening Spice
4 corn tortillas
1/2 cup diced, roasted Anaheim chilies
4 1-oz slices mozzarella cheese
4 lg eggs, cooked to order
Preheat oven to 400F.
Season each turkey medallion with 1/4 teaspoon spice.
Heat a large sauté pan over medium heat. Sear each medallion for 1 to 2 minutes on each side until browned.
Place tortillas on a baking sheet. Top each tortilla with 1 turkey medallion, 2 tablespoons chilies and one slice cheese. Place in the oven for 5 to 6 minutes, or until turkey is cooked through.
Top each turkey stack with a cooked egg.
