Tuna Melt with Mustard Sauce

Open tuna sandwich on rye bread.


Tuna Salad
1 can water-packed light tuna, drained, about 6oz
2 Tbsp minced red bell pepper
2 Tbsp minced yellow bell pepper
2 Tbsp sweet pickle relish
2 Tbsp minced celery
2 Tbsp canola oil mayonnaise
1/2 tsp Dijon mustard
Pinch sea salt
Pinch freshly ground black pepper

Mustard Sauce
1 tablespoon whole grain mustard
1 tablespoon Dijon mustard
1 teaspoon honey
1/2 tsp Coleman’s dry mustard
1 1/2 tsp plain lowfat yogurt
4 slices rye bread
4 slices Swiss cheese, 1 oz each


  1. Combine all ingredients for tuna salad in a medium bowl and mix well.

  2. In a small bowl or cup, combine all ingredients for mustard sauce.

  3. Spread 1/3 cup tuna salad on one slice of rye bread. Top with 1 tablespoon Mustard Sauce and 1 slice of cheese. Repeat with remaining ingredients. Place under broiler for 1 to 2 minutes, or until cheese melts.
