Plum Tomato and Lemon Sauce

1 Tbsp extra virgin olive oil
3/4 cup diced red onion
1/2 tsp minced garlic
1 1/2 lb plum tomatoes
1 tsp lemon zest
3 Tbsp fresh lemon juice
2 tsp cane sugar
1/2 tsp sea salt
1/4 tsp freshly ground black pepper
1/4 cup chopped basil


  1. In a large saucepot, heat olive oil over medium heat and add onions and garlic. Sauté until onions are translucent.

  2. Add lemon zest and cook for 1 minute. Add tomatoes, lemon juice and sugar and cook until the tomatoes are very soft, about 15 minutes. Remove from feat and add salt, pepper and basil and let cool. Pour sauce into a blender container and puree.
