Orange-Glazed Chicken with Screamin’ Ginger Salsa
1/3 cup frozen concentrated orange juice
1/4 cup honey
1/4 cup low-sodium tamari sauce
1 tsp five-spice powder
1/2 tsp minced garlic
4 skinless chicken breast halves, boned and defatted
1/4 cup chopped crystallized ginger
1 Tbsp minced ginger root
2 Tbsp diced red bell pepper
1 Tbsp minced scallion
1 Tbsp fresh chopped basil
1/4 tsp low-sodium tamari sauce
In a medium bowl, combine all ingredients for salsa and mix well.
Combine orange juice concentrate, honey, tamari sauce, five-spice powder and minced garlic in a medium bowl. Brush glaze thoroughly over chicken.
Place on grill and cook for 3 to 5 minutes on each side, or until juices run clear when pierced with a fork.
Serve chicken with 2 tablespoons ginger salsa.
