Golden Jewel Risotto
3 Tbsp diced yellow onions
1 tsp minced garlic
3/4 tsp extra virgin olive oil
1/2 cup Golden Jewel Blend
1 1/4 cups low sodium chicken stock
2 Tbsp grated parmesan cheese
Pinch sea salt
Pinch freshly ground black pepper
In a large sauté pan, over medium heat, sauté onion and garlic in olive oil until onions are translucent. Add Golden Jewel Blend and stir to coat with oil.
Add chicken stock and bring to a boil. Reduce to a simmer and continue simmering until most of the liquid is absorbed, about 15 to 20 minutes.
Remove from heat and stir in parmesan cheese, salt and pepper.
