Ingredients

  • 1 pound broccoli2 Tbsp Lemon Juice
  • 2.5 oz low-fat sour cream
  • 1 Tbsp evaporated cane sugar
  • 3.5 oz dried cranberries
  • 3 oz apples
  • 227 g mayonnaise

Instructions

  1. In a bowl, whisk together lemon juice, sour cream, mayonnaise and evaporated cane sugar.
  2. Using the slicing attachment on your food processor, thinly slice the broccoli.
  3. Using a box grater, grate apples.
  4. Mix broccoli, apples and dried cranberries with dressing.
  5. For best results, allow salad to sit for a couple hours in the fridge before serving.
