1 fresh fennel bulb, tops removed
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
Preheat oven to 400F.
Cut fennel bulb into quarters. Season with salt and pepper.
Place on baking pan and roast for about 20 minutes, or until fennel just begins to brown.
Add 1/2 cup water to pan and cover with aluminum foil. Return to oven and continue to roast until soft, about 20 minutes.
