INGREDIENTS
1 cup low-fat cottage cheese
2 eggs
1 teaspoon vanilla extract
1 tablespoon maple syrup
3/4 cup whole-wheat flour
1/2 cup oat flour
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup mixed berries
1 teaspoon canola oil
INSTRUCTIONS
In a blender, combine the cottage cheese, eggs, vanilla, and maple syrup. Blend until smooth.
In a large mixing bowl, whisk together the whole-wheat flour, oat flour, baking powder, cinnamon, and salt.
Pour the cottage cheese mixture into the dry ingredients and stir just until combined. Do not overmix.
Gently fold in the mixed berries.
Let the batter rest for 5–10 minutes to allow the oats to hydrate.
Heat a lightly oiled nonstick skillet or griddle over medium heat.
