Start your morning with these vibrant pancakes made with antioxidant-rich matcha, fresh spinach, and cozy chai spices. Oat flour adds fiber while keeping the pancakes light and tender, making them a wholesome breakfast the whole family can enjoy. 


INGREDIENTS

FOR THE PANCAKE BATTER 

2-1/2 cups oat flour 

1/2 cup matcha powder 

1/4 cup cane sugar 

2 teaspoons baking powder 

2-1/2 cups non-fat milk 

1/2 cup Rishi Chai Concentrate 

1 egg 

1 cup spinach 

2 tablespoons vanilla extract 


FOR THE GARNISHES  

30 teaspoons pomegranate seeds  

15 tablespoons honey  

15 tablespoons strawberry preserves 



INSTRUCTIONS

  1. Place all ingredients into a blender and purée until smooth.  

  2. Using a lightly oiled, preheated griddle (or hot pan), portion out pancakes (1-1/2 ounces each) as room allows. Flip the pancakes when bubbles have set. Pancakes should be cooked through, and golden brown on both sides.  

  3. To Serve: Plate 2 pancakes garnished with 1 tablespoon strawberry preserves, 1 tablespoon honey, and 2 teaspoons pomegranate seeds.
