A touch of Dijon and fresh thyme balances the natural sweetness, creating a flavorful seasonal dish that's both elegant and approachable.  ⁠ ⁠ ⁠INGREDIENTS ⁠ ⁠FOR THE PORK TENDERLOIN ⁠1-3/4 pounds pork tenderloin, trimmed ⁠1 tablespoon olive oil ⁠1 teaspoon fresh thyme leaves ⁠1/2 teaspoon salt ⁠1/4 teaspoon black pepper ⁠1/2 teaspoon garlic powder ⁠12-1/2 tablespoons apple cranberry chutney ⁠ ⁠ ⁠FOR THE APPLE CRANBERRY CHUTNEY ⁠1-1/2 apples ⁠1/2 cup cranberries, fresh or frozen ⁠1/4 cup yellow onion, diced ⁠6 tablespoons apple cider ⁠2 tablespoons orange juice ⁠1 tablespoon cider vinegar  ⁠1 tablespoon maple syrup ⁠1/2 teaspoon Dijon mustard ⁠1/4 teaspoon cinnamon ⁠1/8 teaspoon ground ginger ⁠1/4 teaspoon salt ⁠1/2 teaspoon orange zest ⁠1/2 tablespoon fresh thyme leaves ⁠ ⁠ ⁠⁠⁠⁠⁠INSTRUCTIONS ⁠ ⁠⁠TO MAKE THE PORK TENDERLOIN 

  1. Preheat oven to 400 F.

  2. Rub pork tenderloin with olive oil, thyme, salt, pepper, and garlic powder.

  3. Heat a large oven-safe skillet over medium-high heat.

  4. Sear pork on all sides, about 2 minutes per side, until well browned.

  5. Transfer to the oven and roast for approximately 15–20 minutes, or until the thickest part reaches 145 F.

  6. Remove from the oven and rest for 8–10 minutes.

  7. Slice pork into 1/2-inch medallions and serve with warm or room-temperature apple-cranberry chutney. ⁠

TO MAKE THE APPLE CRANBERRY CHUTNEY 

  1. Peel, core, and dice the apples.

  2. Combine apples, cranberries, onion, apple cider, orange juice, cider vinegar, maple syrup, Dijon, cinnamon, ginger, and salt in a saucepan.

  3. Bring to a simmer over medium heat.

  4. Cook for 15–20 minutes, stirring occasionally, until the apples are tender and the cranberries have broken down slightly but still retain some shape.

  5. Stir in orange zest and thyme.

  6. Remove from heat and cool slightly. The chutney will thicken as it cools.
