Ingredients 

1 pound chicken thigh, boneless and skinless 

1 ounce green apple, peeled and diced 

1 ounce onion, minced 

1/2 tablespoon garlic, minced 

1/2 tablespoon dry sage 

1 teaspoon cider vinegar 

3/4 teaspoon salt 

1/2 teaspoon black pepper 


Instructions 

1. Cut the chicken thigh into small chunks then place in a large bowl. 

2. In the same bowl, add the remaining ingredients and mix to combine. 

3. In a meat grinder, process your seasoned chicken.  

4. Portion your chicken sausage into 12 patties, each 1.5 oz. 

5. Cook on a griddle or in a pan over medium heat.
