2 corn tortillas
4 ounces Rattlesnake Beans
2 eggs
2 ounces salsa de arbol
2 teaspoons cotija cheese (crumbled)
1 ounce avocado (sliced)
1/2 teaspoon cilantro (chopped)
1 1/2 ounces Chicken Breakfast Sausage with Apple
1. With a pan, grill, or oven, warm the tortillas.
2. On a serving plate, spoon half the beans. Top with 1 tortilla.
3. Spoon the other half of the beans on top of the tortilla, then sprinkle half the cheese over the beans.
4. Place the second tortilla on top of the beans. Spread half the salsa de arbol on top of the tortilla.
5. Cook the 2 eggs over medium and place on top of the sauce. Drizzle the remaining sauce over the eggs. Sprinkle the remaining cheese over the top.
6. Garnish the plate with sliced avocado and cilantro.
7. Serve with a side of chicken breakfast sausage.
