Miso French Onion Soup

INGREDIENTS
3 each Yellow Onion, Julienned
3 Tbsp Garlic, Minced
2 Tbsp Olive Oil
1/3 Cup White Wine
1 Tbsp Thyme, Fresh, Chopped
1 Tbsp Oregano, Fresh, Chopped
1/2 Tbsp Salt
3/4 tsp Black Pepper
1/3 Cup White Miso
6 Cups Vegetable Stock
INSTRUCTIONS
1. In a heavy bottomed stock pot, sweat onions and garlic in olive oil over low heat until browned, stirring often so they don't burn.
2. Add remaining ingredients and increase heat to bring to a boil.
3. Reduce heat to a simmer, and simmer for 1 hour.
