INGREDIENTS  

8 ounces cherries, pitted  

6-1/2 ounces peach, pitted and diced  

3-1/2 ounces cucumber  

2-1/2 ounces yellow onion  

4-1/2 ounces yellow bell pepper  

1/3 cup lite coconut milk  

10 teaspoons orange juice  

1 tablespoon Champagne vinegar  

1 teaspoon salt  

1 teaspoon black pepper  

1/2 cup pistachios, toasted and chopped 

INSTRUCTIONS (FOR 2 PEOPLE) 

Person A

Prep Produce 

  1. Pit cherries. 

  2. Pit and dice peach.  


Prepare Garnish 

  1. Toast pistachios (if not already toasted). 

  2. Chop pistachios.  


Serve 

  1. Portion 4 ounces per serving.  

  2. Top each with 1 tablespoon chopped pistachios.

Prep Produce  

  1. Peel and dice cucumber.  

  2. Dice yellow onion. 

  3. Dice yellow bell pepper. 


Blend  

  1. Place the cherries into a blender along with the peach, cucumber, yellow onion, yellow bell pepper, lite coconut milk, orange juice, Champagne vinegar, salt, and black pepper. 

  2. Blend until smooth.
