INGREDIENTS
8 ounces cherries, pitted
6-1/2 ounces peach, pitted and diced
3-1/2 ounces cucumber
2-1/2 ounces yellow onion
4-1/2 ounces yellow bell pepper
1/3 cup lite coconut milk
10 teaspoons orange juice
1 tablespoon Champagne vinegar
1 teaspoon salt
1 teaspoon black pepper
1/2 cup pistachios, toasted and chopped

Pit cherries.
Pit and dice peach.
Prepare Garnish
Toast pistachios (if not already toasted).
Chop pistachios.
Serve

Dice yellow onion.
Dice yellow bell pepper.
Blend
