Spinach Salad with Strawberry Champagne Vinaigrette
1 cup sliced apples
1/2 cup Apple Cider Vinaigrette
Strawberry Champagne Vinaigrette
1/2 cup strawberries
2 Tbsp champagne vinegar
1 Tbsp cane sugar
Pinch sea salt
4 cups organic spinach leaves
4 tsp chopped toasted walnuts
4 Tbsp crumbled chèvre cheese
4 Tbsp dried cranberries
Place apple slices in a glass baking pan and cover with apple cider vinaigrette. Marinate in refrigerator for at least 2 hours.
In a blender container, combine all ingredients for strawberry champagne vinaigrette and puree.
In a medium bowl, toss together spinach and strawberry vinaigrette.
Serve 1 cup of spinach with 1/4 cup of marinated apples, 1 teaspoon walnuts, 1 tablespoon cheese and 1 tablespoon cranberries.
