Salmon Teriyaki

Ingredients

1 lb salmon fillets, cut into 4 equal portions
1/2 cup low-sodium wheat-free tamari soy sauce
2 Tbsp rice vinegar
3 tsp chopped fresh garlic
3 tsp fresh ginger, minced
1 1/2 cups thawed apple juice concentrate
1/2 cup finely chopped green onions

Instructions

  1. Combine all ingredients except onions and salmon in blender container and process. Stir in onions.

  2. Place salmon in glass baking dish and pour the marinade over salmon. Marinate for 10 minutes to 1 hour. Turn salmon occasionally to evenly distribute marinade.

  3. Preheat grill or broiler. Grill or broil 3 to 5 minutes on each side, or until fish flakes easily.
