Pickled Red Onions

Pickled onions are a great way to add a bright, crisp kick to anything from tacos and avocado toast to our Falafel Salad.
INGREDIENTS
4 ounces red onion, thin sliced
3/4 teaspoon Mexican oregano
1/4 cup red wine vinegar
1/4 cup lime juice
INSTRUCTIONS
Place your thinly sliced onions in a small glass jar, along with Mexican oregano, vinegar, and lime juice.
Shake the jar until everything is combined.
Place in the fridge for 24 hours.
Drain liquid and serve.
COOKING TIP
It’s important that the onions are completely covered by the liquid, otherwise they won’t pickle evenly.
