Peanut Butter Protein Bars

These bars provide protein, healthy fats, and fiber to support satiety and steady energy. Nuts, seeds, and peanut butter powder add texture and nourishment, while dried cranberries offer natural sweetness.  


INGREDIENTS 

2-1/4 ounces pumpkin seeds 

1-3/4 ounces sunflower seeds 

1-1/4 ounces walnuts 

1-3/4 ounces sliced almonds 

11 ounces brown rice syrup 

2 ounces peanut butter 

5-1/2 ounces dried cranberries 

10-1/4 ounces peanut butter powder 


INSTRUCTIONS

  1. Preheat the oven to 300 F. 

  2. Place pumpkin seeds, sunflower seeds, walnuts, and sliced almonds onto a sheet pan. Toast in the oven for 10 minutes, then cool completely. 

  3. Add brown rice syrup and peanut butter to a double boiler and heat gently until melted and combined. 

  4. Place cooled nuts, seeds, and dried cranberries into a food processor. Pulse until broken down and a thick paste begins to form. 

  5. Transfer the mixture to a stand mixer fitted with a paddle attachment. Add peanut butter powder and the warmed syrup mixture. Mix until fully incorporated. 

  6. Line a 9 x 13-inch baking dish or sheet pan with parchment paper, then lightly coat it with oil. 

  7. Transfer the mixture to the pan and press into an even layer. 

  8. Cool completely, then cut into 16 equal-sized bars. 


NOTES 

  1. Double Boiler: A double boiler is made by placing a heatproof bowl over a pot of simmering water. This helps melt ingredients gently without scorching.
