Tender chicken, chickpeas, and sweet potatoes simmer together with turmeric, ginger, garlic, and warming Moroccan spices in this hearty, aromatic stew. Packed with protein, fiber, and colorful vegetables, it’s a satisfying one-pot meal.  


⁠INGREDIENTS ⁠2 tablespoons olive oil ⁠40 ounces chicken thigh, boneless and skinless ⁠1 teaspoon salt ⁠1/2 teaspoon black pepper ⁠1 yellow onion, diced ⁠4 teaspoons garlic, minced ⁠1 tablespoon ginger, minced  ⁠2 teaspoons turmeric ⁠2 teaspoons cumin, ground ⁠1 teaspoon coriander seed, ground ⁠1 teaspoon smoked paprika ⁠1/2 teaspoon cinnamon ⁠28 ounces crushed tomatoes ⁠4 cups chicken stock ⁠2 large sweet potatoes, peeled and diced (3/4-inch) ⁠30 ounces chickpeas, cooked ⁠3 cups baby spinach ⁠1 preserved lemon, finely chopped ⁠1/4 cup cilantro, chopped ⁠salt and pepper to taste ⁠ ⁠ ⁠⁠⁠⁠⁠⁠INSTRUCTIONS

  1. Heat olive oil in a large pot over medium-high heat.

  2. Season the chicken with salt and pepper. Working in batches, sear the chicken for 3–4 minutes per side, until lightly browned. Remove and set aside. Reduce heat to medium.

  3. Add the onion and cook for 5–7 minutes, until softened.

  4. Add garlic and ginger and cook for 30 seconds.

  5. Add turmeric, cumin, coriander, smoked paprika, and cinnamon. Stir constantly for about 30 seconds, allowing the spices to become fragrant.

  6. Add the crushed tomatoes and chicken stock, scraping the bottom of the pot to release any browned bits. Add the sweet potatoes and chickpeas.

  7. Return the chicken and any accumulated juices to the pot. Bring to a gentle simmer.

  8. Cover partially and simmer for 25–30 minutes, stirring occasionally until the chicken is tender and cooked through, the sweet potatoes are fork-tender, and the sauce has thickened slightly.

  9. Stir in the spinach and cook for 2–3 minutes, until wilted.

  10.  Add the preserved lemon and cilantro.

  11. Taste and adjust salt, pepper, and lemon as needed.

  12. Ladle into bowls and garnish with fresh cilantro. Serve with lemon wedges. ⁠
