1/2 cup champagne vinegar
2 Tbsp red wine
1/4 cup dice yellow onions
1 tsp fresh thyme
1/4 tsp freshly ground black pepper
1 tsp sea salt
1/2 Tbsp extra virgin olive oil
2 cups button mushrooms
1 1/2 Tbsp fresh chopped chives
1 1/2 Tbsp fresh chopped parsley
1/2 tsp fresh chopped thyme
3/4 tsp sea salt
8 lavosh crackers
In a saucepan, combine all ingredients for marinate and bring to a boil. Remove from heat and set aside.
Slice mushrooms in quarters. In small bowl, combine marinate and mushrooms. Marinate mushrooms for two hours at room temperature.
Drain and discard liquid from mushrooms. Stir in remaining ingredients.
Serve 1/2 cup of marinated mushrooms with 2 lavosh crackers.
