Grilled Peanut Butter Banana Sandwich

Ingredients

3 Tbsp low-fat cream cheese
3 Tbsp natural peanut butter
1/2 banana, mashed
1 1/2 Tbsp honey
1/8 tsp sea salt
8 slices multi-grain bread
4 med bananas
Canola oil spray

Instructions

  1. In a small mixing bowl, combine cream cheese, peanut butter, banana, honey and salt. Mix on low with an electric mixer and then increase speed until ingredients are well blended, about 30 seconds. Spread 2 1/2 tablespoons peanut butter mixture on each of 4 slices of bread.

  2. Lightly coat a large sauté pan with canola oil spray and heat to a medium-high temperature. Slice bananas in half, and then in half again lengthwise. Place sliced bananas in sauté pan and cook until caramelized.

  3. Place cooked bananas on top of bread slices with peanut butter mixture. Place remaining slices on top to make a sandwich. Lightly spray the outside of the sandwich before sautéing. Cook until golden brown on each side. Slice sandwich in half on the diagonal and serve.
