Fiesta Lime Slaw

INGREDIENTS
12 oz Red Cabbage, Shredded
1 oz Scallion, Sliced
4 oz Carrot, Shredded
3 oz Jicama, Julienned
1 oz Cilantro, Chopped
2 Tbsp Lime Juice
1/4 tsp Salt
1 oz Honey
2 oz Kefir, Low-Fat
1/2 Tbsp Sambal Sauce
1/2 tsp Cumin
1/2 tsp Coriander Seed, Ground
2 oz Mayonnaise INSTRUCTIONS
1. Finely shred cabbage, thinly slice scallions on a bias.
2. Shred carrots, finely julienne jicama, finely chop cilantro. Mix vegetables and set aside.
3. Mix all remaining ingredients in a separate bowl until thoroughly combined. Pour over vegetables and toss to coat.
