Desert Delight Mocktail from Canyon Ranch
Butterfly Pea Tea
1 tsp Butterfly Pea leaves
2 cups water
1/4 cup lemon juice
2 1/2 cups water
3 tbsp evaporated cane sugar
Butterfly Pea Flower is a plant most commonly grown in South East Asia. It has been used for centuries as a tea for its strong antioxidants, anthocyanins which can support well-being, and versatile catechins, which may help maintain weight and cardiovascular health.
- To Make Butterfly Pea Tea: Bring 2 cups of water to a boil, and remove from heat. Add in Butterfly Pea leaves and steep for 20 minutes. Strain, then cool.
- To Make Lemonade: Combine water, lemon juice, and evaporated cane sugar, and whisk until dissolved.
- To Serve: Fill a tall glass with ice 2/3 full). Pour 4 oz. Butterfly Pea Tea over the ice, then pour in 5 oz. of lemonade and watch the magic as the drink turns from blue to purple! If you want to elevate your mocktail, even more, freeze edible flowers or herbs in ice cubes to serve with your drink.
