Cucumber Greek Salad

Refreshing Cucumber Greek Salad

Ingredients

  • 2.5 oz red wine dressing
  • 10 oz cucumber
  • 5 oz red onion
  • 2.5 oz yellow bell pepper
  • 5 oz strawberries
  • 10 oz heirloom tomatoes
  • 2 oz green olives
  • 1 oz ricotta salata cheese
  • 1 oz basil, fresh
  • 1/2 oz mint, fresh

Instructions

  1. Cut peppers into small squares, chop olives, quarter strawberries, julienne onion, and slice cucumbers and heirloom tomatoes into wedges.
  2. Toss all vegetables with red wine dressing in a bowl and split amongst 5 serving plates.
  3. Garnish each plate with cheese, basil & mint.

*To make Red Wine Dressing: place 1/8 tsp of salt, 1.5 Tbsp grape seed oil, 1.5 Tbsp red wine vinegar, 3/4 tsp dijon mustard, 1/2 tsp dry oregano, and 1 Tbsp minced shallot in a blender and puree.
