2.5 oz red wine dressing
10 oz cucumber
5 oz red onion
2.5 oz yellow bell pepper
5 oz strawberries
10 oz heirloom tomatoes
2 oz green olives
1 oz ricotta salata cheese
1 oz basil, fresh
1/2 oz mint, fresh
Cut peppers into small squares, chop olives, quarter strawberries, julienne onion, and slice cucumbers and heirloom tomatoes into wedges.
Toss all vegetables with red wine dressing in a bowl and split amongst 5 serving plates.
Garnish each plate with cheese, basil & mint.
*To make Red Wine Dressing: place 1/8 tsp of salt, 1.5 Tbsp grape seed oil, 1.5 Tbsp red wine vinegar, 3/4 tsp dijon mustard, 1/2 tsp dry oregano, and 1 Tbsp minced shallot in a blender and puree.
