Okinawan Sweet Potato Cappuccino

Discover how to pair this superfood with lavender and truffle oil for a healthful, low-sodium dish you can easily recreate at home.

Ingredients 

Lavender Foam

1/2 cup heavy cream 

1/4 teaspoon lavender, dry 

1/2 teaspoon agar-agar 

1/8 teaspoon salt 


Purple Sweet Potato Puree

7 ounces purple sweet potato, roasted 

1-3/4 tablespoon whole milk 

1-1/2 teaspoon butter, unsalted 

1/3 teaspoon maple syrup 

truffle oil 

salt 


Sweet Potato Cappuccino

2 ounces purple potato puree 

1/2 ounce lavender foam 

1/4 teaspoon purple sweet potato powder 

Instructions

 Lavender Foam

1. In a small pot, heat heavy cream over medium-low heat. Sprinkle in the lavender and agar-agar. 

2. Bring to a gentle simmer to help activate the agar-agar. Remove from heat and let sit for 5 minutes. 

3. Add salt and strain. Keep warm until ready to serve. 


Purple Sweet Potato Puree

1. In a small pot, warm butter and milk over low heat until butter has just melted. 

2. Using a ricer or food mill, process the roasted sweet potato. 

3. In the pot, add the warmed milk, butter, and maple syrup. Mix by hand until incorporated. 

4. Add truffle oil and salt as needed to taste. 


Sweet Potato Cappuccino

1. In a coffee cup, add 2 ounces of hot Purple Sweet Potato Puree. 

2. Using a culinary foam canister (also known as a cream whipper or whipping siphon) load the Lavender Foam. Follow the instructions that come with your canister to make a foam. 

3. Discharge foam on top of the purple potato puree, then smooth out the top. You want to replicate the look of a cappuccino. 

4. Dust the top with a sprinkling of purple sweet potato powder.
