Sweet Potato & Avocado Toast

INGREDIENTS
FOR THE TOAST
1 slice whole wheat bread
1/2 ounce black bean mash
1/2 ounce sweet potato, baked
1 pinch smoked sea salt
1/2 ounce baby arugula
1/2 ounce avocado, sliced
1 teaspoon everything bagel seasoning
4 garlic chips
1 lime wedge
FOR THE BLACK BEAN MASH
(yields ~4 ounces)
3/4 teaspoon olive oil
2 teaspoons yellow onion, diced
1 teaspoon garlic, minced
3 ounces black beans, cooked
1 ounce silken tofu
1 pinch salt
1/8 teaspoon black pepper
FOR THE GARLIC CHIPS
1 clove garlic
1 teaspoon olive oil
1 pinch salt
INSTRUCTIONS
TO MAKE THE TOAST
Toast the bread and spread the black bean mash evenly on top.
Slice the baked sweet potato and layer onto the toast. Sprinkle with smoked sea salt. Top with baby arugula.
Coat the sliced avocado with everything bagel seasoning and place on the toast.
Top with garlic chips and serve with a lime wedge.
TO MAKE THE BLACK BEAN MASH
Place a sauté pan over medium-low heat and add olive oil, onion, and garlic. Cook until the onion is translucent.
Add remaining ingredients and mix well.
Transfer to a food processor and blend until smooth. Let cool.
TO MAKE THE GARLIC CHIPS
Preheat the oven to 300 F.
Thinly slice the garlic.
Line a sheet pan with parchment paper and drizzle with olive oil. Add garlic and sprinkle with salt.
Bake, stirring occasionally, until golden brown and crisp. Watch closely to avoid burning.
