Bright, spicy, and satisfying, these lettuce wraps combine roasted cauliflower, peppers, mushrooms, and lentils with cumin, turmeric, and chili. Crisp lettuce and cabbage add freshness and crunch, while a tangy lime sauce brings everything together. ⁠ ⁠⁠⁠INGREDIENTS ⁠FOR THE WRAPS   ⁠ ⁠12 ounces cauliflower, cut into small florets   ⁠3/4 cup red bell pepper, diced   ⁠3/4 cup mushrooms, sliced   ⁠1/2 cup red onion, diced   ⁠1 tablespoon olive oil   ⁠1 teaspoon cumin, ground   ⁠3/4 teaspoon smoked paprika   ⁠1/2 teaspoon turmeric   ⁠1/4 teaspoon ground coriander   ⁠1/8 teaspoon cayenne pepper   ⁠1/2 teaspoon salt   ⁠1/4 teaspoon black pepper   ⁠1-1/2 cups green or brown lentils, cooked  ⁠1 tablespoon lime juice   ⁠15 large romaine leaves   ⁠3/4 cup red cabbage, shredded   ⁠1/4 cup cilantro, chopped  ⁠2 tablespoons pumpkin seeds, toasted  ⁠6 tablespoons spicy lime sauce ⁠ ⁠ ⁠FOR THE SPICY LIME SAUCE  ⁠ ⁠1/4 cup plain Greek yogurt   ⁠1 tablespoon lime juice   ⁠1/2 tablespoon water   ⁠1/2 teaspoon cumin, ground   ⁠1/4 teaspoon chili powder   ⁠1/8 teaspoon cayenne pepper   ⁠1/4 teaspoon salt ⁠ ⁠ ⁠⁠⁠INSTRUCTIONS ⁠ ⁠⁠TO MAKE THE WRAPS  

  1. Preheat oven to 425 F.

  2. Toss cauliflower, bell pepper, mushrooms, and red onion with olive oil, cumin, paprika, turmeric, coriander, cayenne, salt, and pepper. Spread evenly on a sheet pan and roast for 20–25 minutes, stirring once, until browned and tender. 

  3. Add the cooked lentils to the roasted vegetables during the final 5 minutes of cooking, just long enough to warm them through.

  4. Remove from the oven and toss with fresh lime juice. Taste and adjust seasoning.

  5. Place approximately 1/3 cup of the warm vegetable-lentil mixture into each lettuce leaf. Top with shredded cabbage, cilantro, and toasted pumpkin seeds. 

  6. Drizzle lightly with the spicy lime sauce or serve it alongside for dipping.  

⁠TO MAKE THE SPICY LIME SAUCE

  1. Whisk together Greek yogurt, lime juice, water, cumin, chili powder, cayenne, and salt. Add a little additional water if needed to create the right consistency for drizzling.
