Turkey & Mushroom Meatloaf Turkey & Mushroom Meatloaf

Lean ground turkey, savory mushrooms, and herbs create a flavorful meatloaf finished with a tangy tomato glaze. Mushrooms add depth and help retain moisture, making this a satisfying homestyle favorite with a lighter protein base. INGREDIENTS FOR THE MEATLOAF 1 teaspoon olive oil 8 ounces cremini mushrooms, finely chopped 1/2 yellow onion, diced 2 teaspoons garlic, minced 1 teaspoon thyme, dried 1/2 cup rolled oats 1 egg 2 tablespoons low-fat milk 1 tablespoon Worcestershire sauce 1 teaspoon Dijon mustard 1/2 teaspoon salt 1/2 teaspoon black pepper 24 ounces lean ground turkey FOR THE TOMATO GLAZE 1/4 cup ketchup 1 tablespoon tomato purée 1 teaspoon apple cider vinegar 1 teaspoon Dijon mustard 1 teaspoon maple syrup INSTRUCTIONS TO MAKE THE MEATLOAF

  1. Preheat oven to 375 F.

  2. Heat olive oil in a skillet over medium heat.

  3. Add the mushrooms and onion. Cook for 8–10 minutes, stirring occasionally, until the mushrooms release their moisture and the mixture is fairly dry.

  4. Add garlic and thyme and cook for another 30 seconds.

  5. Transfer to a plate and allow to cool for 5–10 minutes. This prevents the hot vegetables from warming the raw turkey mixture.

  6. In a large bowl, combine oats, egg, milk, Worcestershire, Dijon, salt, and pepper.

  7. Add ground turkey and the cooled mushroom mixture.

  8. Mix gently with clean hands or a fork, just until combined. Avoid overmixing, which can make the meatloaf dense.

  9. Line a rimmed baking sheet with parchment.

  10. Shape the mixture into a compact loaf approximately 8 × 4 inches.

  11. Spread about half the tomato glaze over the meatloaf. Reserve the rest for the final bake.

  12. Bake for 35 minutes.

  13. Spread the remaining glaze over the top.

  14. Continue baking for another 15–20 minutes, until the center reaches 165 F.

  15. Rest for 10 minutes before slicing.

TO MAKE THE TOMATO GLAZE

  1. In a small bowl, mix ketchup, tomato paste, vinegar, Dijon, and optional maple syrup.
