Flourless Nut Butter Banana Muffins

INGREDIENTS
1 cup creamy nut butter (peanut, cashew, or almond)
3 medium ripe bananas
2 large eggs
1 teaspoon pure vanilla extract
1/2 teaspoon baking soda
1 teaspoon apple cider vinegar
canola oil, for greasing
DIRECTIONS
Preheat the oven to 400 F.
Coat two 12-cup mini muffin tins with canola oil.
Add all ingredients to a food processor and blend until smooth. The batter will be thick.
Fill each muffin cup to the top with batter.
Bake for 8 to 10 minutes until golden.
Let cool, then remove from the tins.
To Serve: Pair with 1/2 to 1 cup plain yogurt.
