Ingredients

Crust
⅔ cup unsalted butter, room temperature
⅓ cup cane sugar
1Tbsp minced lime zest
1⅔ cups all-purpose flour

Filling
1½ cups cane sugar
1/4 cup all-purpose flour
½ teaspoon aluminum-free baking powder
5 whole eggs
3 Tbsp minced lime zest
⅔ cup freshly squeezed lime juice
1½ tsp pure vanilla extract

Whipped Topping
¾ cup heavy cream
¾ cup nonfat Greek yogurt
⅓ cup cane sugar
¾ vanilla bean, scraped

Instructions
  1. Preheat oven to 350F.
  2. In a food processor, blend butter, first amount of sugar and lime rind. Gradually add in flour to form soft crumbs. In a 9-inch by 13-inch baking pan, evenly press crumbs to form a crust. Bake for 15 minutes.
  3. In a small bowl, stir together baking powder and second amounts of sugar and flour.
  4. In a large mixing bowl, with a hand held mixer, beat eggs well. Gradually add sugar/flour mixture to eggs. Stir in lime peel, key lime juice and vanilla extract. Pour lime mixture over baked crust. Return to oven and bake for 20 minutes, or until top and sides are light brown in color. Allow bars to cool.
  5. In a medium bowl, with a hand held mixer, mix all ingredients for whipped topping until fluffy.
  6. Cut bars into 32 squares, about 2-inches by 1½ inches. Serve each bar topped with 1 tablespoon whipped topping.
