Nutrition Information (per serving)
6 (½ cup ea.)
3 med potatoes
½ cup fat free milk
½ tsp minced garlic
2 tsp chopped chives
⅓ tsp sea salt
⅔ tsp freshly ground black pepper
2 tsp extra virgin olive oil
- Peel potatoes and cut into large cubes. Place in a medium pot of boiling water and partially cook, about 10 minutes.
- In a medium saucepan over medium-low heat, bring milk to a simmer.
- When potatoes are partially cooked, drain well and transfer to the preheated milk. Finish cooking until potatoes are done. If the potatoes become dry, add a small amount of milk.
- Combine potatoes with the remaining ingredients. Mash until smooth with a hand masher or mixer until well combined.
