Ingredients

Dressing
2 tsp sesame tahini
2 Tbsp fresh lemon juice
1 tsp ground sumac
2 Tbsp water
1¼ tsp extra-virgin olive oil
½ tsp sea salt
¼ tsp freshly ground black pepper

1 cup canned garbanzo beans, rinsed well
1 cup chopped Romaine lettuce
½ cup chopped tomatoes
½ cup peeled, diced cucumbers
¼ cup diced red onions

16 pita chips
1 whole-wheat pita
1 Tbsp Zataar spice mix
1 Tbsp  olive oil spray

4 tsp pine nuts
2 tsp minced fresh mint

Zataar and Sumac are popular spices used in Middle Eastern cuisine. They can be purchased at many Middle Eastern food stores.
Instructions
  1. In a small bowl, whisk together all ingredients for dressing.
  2. In a large bowl, toss dressing together with garbanzo beans, lettuce, tomatoes, cucumbers and onions.
  3. Preheat oven to 375F.
  4. Separate pita pocket into two halves. Cut each piece into 8 triangles. Distribute pita triangles on a baking sheet and generously coat with olive oil spray. Sprinkle Zataar spice mix over the triangles and toss to coat. Bake for 5 minutes, or until brown and crisp.
  5. Divide salad into 4 equal portions. Top each portion with 4 pita chips, 1 teaspoon pine nuts and ½ teaspoon minced mint and serve.
