Beef Gyro with Tzatziki

Ingredients

Tzatziki
1 cup nonfat plain yogurt
2 garlic cloves, minced
2 tsp dry oregano
1 Tbsp fresh chopped mint
1 tsp fresh lemon juice
Pinch sea salt
Pinch freshly ground black pepper
⅓ cup diced cucumber

4 garlic cloves, minced
2 Tbsp fresh lemon juice
2 Tbsp chopped fresh oregano
1 Tbsp chopped fresh rosemary
½ tsp sea salt
½ tsp freshly ground black pepper
2 tsp extra-virgin olive oil
1 lb sirloin of beef
1 med tomato, sliced
½  red onion, thinly sliced
4 Tbsp crumbled feta cheese
4 whole-wheat pita halves

 

Instructions
  1. In a medium bowl , combine all ingredients for tzatziki and mix well. Refrigerate until ready to use.
  2. In a small bowl, combine garlic, lemon juice, oregano, rosemary, salt, pepper and olive oil. Rub on beef. Place seasoned beef on a plate, cover and let sit for up to an hour in the refrigerator.
  3. Preheat grill or broiler. Grill or broil steak to desired doneness. Slice thinly.
  4. Place 4 ounces beef in ½ pita pocket. Top with tomato and onion slices. Sprinkle with 1 tablespoon feta cheese. Serve with ¼ cup tzatziki.
