Shrimp Salad Sandwich

A shrimp salad sandwich.

Ingredients

12 oz cooked shrimp, peeled and deveined
2 Tbsp minced red onion
1/2 cup diced celery
1/2 cup grape tomatoes, quartered
8 slices whole grain bread

Dressing
2 Tbsp prepared horseradish, drained
2 Tbsp canola oil mayonnaise
2 Tbsp ketchup
1/4 tsp Worcestershire sauce
1/8 tsp sea salt
1/8 tsp freshly ground black pepper
1 Tbsp chopped fresh chives
1 Tbsp fresh lemon juice

Instructions

  1. In a small bowl combine all ingredients for dressing. Set aside.

  2. Dice shrimp into 1-inch pieces.

  3. In a medium bowl combine diced shrimp, onions, celery, tomatoes and dressing and toss together. Serve 3/4 cup shrimp salad on 2 slices bread.
