Spinach Salad with Strawberry Champagne Vinaigrettedate: July 30, 2012
Nutrition Information (per serving)
1 cup sliced apples
½ cup Apple Cider Vinaigrette
Strawberry Champagne Vinaigrette
½ cup strawberries
2 Tbsp champagne vinegar
1 Tbsp cane sugar
Pinch sea salt
4 cups organic spinach leaves
4 tsp chopped toasted walnuts
4 Tbsp crumbled chèvre cheese
4 Tbsp dried cranberries
- Place apple slices in a glass baking pan and cover with apple cider vinaigrette. Marinate in refrigerator for at least 2 hours.
- In a blender container, combine all ingredients for strawberry champagne vinaigrette and puree.
- In a medium bowl, toss together spinach and strawberry vinaigrette.
- Serve 1 cup of spinach with ¼ cup of marinated apples, 1 teaspoon walnuts, 1 tablespoon cheese and 1 tablespoon cranberries.
