Mixed Greens with Pineapple Vinaigrettedate: November 1, 2012
Nutrition Information (per serving)
¼ cup frozen pineapple juice concentrate
3 Tbsp champagne vinegar
1 Tbsp extra-virgin olive oil
¼ tsp sea salt
Pinch freshly ground black pepper
1½ tsp chopped mint
4 cups organic mix greens
4 tsp chopped toasted walnuts
4 Tbsp crumbled chèvre cheese
- In a blender container, combine all ingredients for pineapple vinaigrette and mix well.
- Serve 1 cup of mix greens with 1 teaspoon toasted walnuts, 1 tablespoon crumbed chèvre cheese and toss with 2 tablespoons pineapple vinaigrette.
