Duck with Blueberry Ginger Saucedate: October 25, 2012

Blueberry Ginger Sauce
1½ cups fresh blueberries
1 Tbsp minced ginger
1 Tbsp fresh lime juice
1 Tbsp cane sugar
¼ tsp sea salt
⅛ cup chopped scallions
6 4-oz skinless duck breast, boned and defatted
- Preheat grill or broiler.
- In a blender container combine 1 cup blueberries, ginger, lime juice, sugar, salt and scallions. Lightly puree. Pour blueberry sauce in a medium bowl and stir in remaining blueberries by hand.
- Grill or broil marinated duck breast 3 to 5 minutes on each side, or until cooked through.
- Serve each duck breast with ¼ cup blueberry ginger sauce.
