Nutrition Information (per serving)
4 (½ cup ea.)
½ lb chopped fresh leeks, white part only
1½ Tbsp unsalted butter
1⅓ Tbsp all purpose flour
⅔ cup 1% milk
½ tsp sea salt
Pinch freshly ground black pepper
2 tsp fresh lemon juice
- Over medium heat, melt butter in a small saucepan. Add leeks, sautéing until translucent. Add flour and cook for 5 minutes, stirring constantly.
- Keeping heat at medium, add milk and continue stirring until it thickens and coats leeks. Reduce heat to low and cook for 3 more minutes, stirring constantly to avoid scalding.
- Remove from heat and add salt, pepper and lemon juice and serve.
