Beef Tenderloin with Tomato Bleu Cheese Salsadate: October 22, 2012

Tomato Bleu Cheese Salsa
1½ cups chopped tomatoes
¼ cup minced red onion
¼ cup bleu cheese, crumbled
1 Tbsp chopped fresh parsley
1 tsp dried oregano
½ tsp sea salt
¼ tsp freshly ground black pepper
2 tsp fresh lemon juice
4 4-oz beef tenderloin filets
Pinch sea salt
Pinch freshly ground black pepper
- Preheat grill or broiler.
- In a medium bowl, combine all ingredients for salsa and mix well. Set aside.
- Season the filets with salt and pepper. Grill or broil beef 3 to 5 minutes on each side, or to desired doneness.
- Serve each filet with ½ cup of salsa.
