Banana Bread Pudding with Chocolate Saucedate: October 30, 2012

1 cup evaporated skim milk
½ cup half and half
½ cup 2% milk
1 lg egg
4 lg egg yolks
3 Tbsp cane sugar
2 bananas, peeled and chopped into bite-size pieces
Pinch sea salt
6 slices multi-grain bread
4 Tbsp fruit-juice sweetened, low-fat chocolate sauce
- Preheat oven to 325F. Lightly coat 8-inch by 8-inch inch baking pan with canola oil spray.
- In a large bowl, combine evaporated milk, half and half, 2% milk, egg, egg yolks, sugar, bananas and salt.
- Break up bread slices into small pieces and spread out on the bottom of pan. Pour milk mixture over bread and let soak for 15 minutes. Bake for 45 minutes, or until knife comes out clean when inserted in the middle. Remove from oven and cool.
- Cut bread pudding into 12 2-inch by 2½-inch squares and serve each topped with 1 teaspoon chocolate sauce.
