Napoleon of Heirloom Tomatoes & Mozzarella Cheese

Ingredients 

1 med red tomato
1 med yellow tomato
2 oz fresh mozzarella cheese
1 cup fresh chopped basil
½ Tbsp balsamic vinegar
½ tsp sea salt
¼ tsp freshly ground black pepper

Instructions 
  1. Cut each tomato into 4 equal slices. Slice cheese into 8 slices, each weighing ¼ ounce.
  2. In a small bowl, toss together basil, balsamic vinegar, salt and pepper.
  3. Place one red tomato slice on the bottom of a plate, then add one slice of cheese. Place one yellow tomato slice on top, followed by a slice of cheese and another red tomato slice. Top Napoleon with ¼ cup chopped basil and balsamic vinegar mixture. Repeat for each serving.
