Nutrition Information (per serving)
1¼ lb calamari, cleaned and sliced into circles
2 Tbsp chopped string green beans
¼ cup chopped peppadew peppers
1 tablespoon minced, roasted ginger root, about 1 oz
¼ tsp sea salt
1/8 tsp freshly ground black pepper
1 Tbsp extra virgin olive oil
½ Tbsp champagne vinegar
- Lightly coat a large sauté pan with canola oil spray.
- Stir fry calamari over medium heat for 1 minute, or until no longer translucent. Set aside to cool.
- Clean sauté pan and stir-fry green beans for 1 minute until crisp.
- In a large bowl, toss all ingredients together and serve.
