Ingredients
½ cup minced red onion
¼ cup minced leeks
¾ tsp minced garlic
3¼ cups 2% milk
⅓ cup unsalted butter
¼ cup heavy cream
½ tsp freshly ground black pepper
¾ tsp sea salt
1¼ cups hominy grits
2 Tbsp minced chives
2 Tbsp minced scallions
Instructions
- In a large saucepan, sauté onions, leeks and garlic until translucent. Add milk, butter, cream, salt and pepper. Whisk in grits and bring to a boil. Cook 5 minutes. Add scallions and chives.
- Lightly coat a square baking pan with canola oil spray. Pour in grits and let set. Cut into 12 cakes and remove from pan. Sauté lightly on both sides in a large sauté pan until golden brown.
