Ingredients
Dressing
2 Tbsp prepared horseradish
2 Tbsp cider vinegar
2 Tbsp low-fat sour cream
½ Tbsp canola oil
½ tsp cane sugar
½ tsp sea salt
2 cups shredded carrots
¼ cup thinly sliced red onions
1 tsp chopped fresh parsley
Instructions
- In a large bowl, whisk together dressing ingredients.
- Shred carrots, place in cheesecloth and squeeze to remove any excess liquid. Add carrots, onions and parsley to dressing and toss until evenly coated.
