Ingredients 

⅓ cup scallions, finely minced
½ tsp sesame oil
3 Tbsp brown miso paste
1 qt vegetable stock
¼ cup firm tofu, diced (optional)

Miso loses nutritional qualities when allowed to boil; always simmer miso over low heat.
Instructions 
  1. In a medium sauce pan over medium heat, sauté shallots in sesame oil until translucent in appearance.
  2. Add miso paste and stir well. Add vegetable stock and bring to a simmer. Reduce heat to low and simmer 10 to 15 minutes.
  3. Garnish with tofu, if desired.
