Ingredients
White Grape Dressing
2 Tbsp toasted pine nuts
⅓ cup white grape juice concentrate
½ cup champagne vinegar
4 lg fresh basil leaves
1 tsp chopped fresh oregano
½ tsp sea salt
½ tsp black pepper
1 tsp olive oil
8 cups packed Spring Mix greens
1½ cups canned garbanzo beans, drained
1½ cups peeled, diced English cucumber
3 cups chopped tomatoes
½ cup chopped dried prunes
¾ cup chopped Kalamata olives
¾ cup diced red onion
¾ cup crumbled feta cheese
2 Tbsp toasted pine nuts
Instructions
- Place all dressing ingredients in a blender or food processor, and blend until smooth.
- In a large bowl, combine all ingredients for salad, including dressing, and toss until combined.
- Divide salad among 8 salad plates.
