Ingredients
1 lb fresh hearts of palm
2 papaya or mango, fresh
Dressing
1 Tbsp extra virgin olive oil
½ tsp thyme, fresh, chopped
¼ cup chopped shallots
1 Tbsp Dijon mustard
¼ tsp chopped fresh garlic
4 Tbsp champagne vinegar
2 Tbsp water
¼ tsp sea salt
¼ tsp cane sugar
Instructions
- Peel the outer layer of hearts of palm, and thinly slice. Peel and slice papaya.
- Combine all salad dressing ingredients and puree in blender. Toss sliced hearts of palm with salad dressing. Serve ¼ cup sliced hearts of palm with 3 to 4 slices of papaya.
